Freekeh, the ancient traditional green wheat of Palestine is a remarkable super grain. Unlike many other types of Freekeh available, which are dry and more ‘mature’, Canaan Freekeh is harvested much earlier when the wheat is still very young and green, and then prepared to authentic traditions – flame roasted, sun-dried then rubbed and crushed. Flame roasting gives a smokey flavour, it is more chewy and has more texture to it. It is very high in protein, has 4 times the fibre as brown rice and tastes delicious.
